I think my favorite part about living in California is that we can get Avocado’s AND good citrus most of the year! But when summer graces us with her warm kisses, the fruit is just a little tastier.
Here is a salad I loved when I was pregnant and still love today!
INGREDIENTS-Chop it all in put it in a bowl!
1 Small head Napa Canbage, rinsed Chopped
2 Navel Oranges, segmented
1 Large Ripe Haas Avocado, diced
1/4 of a Small Jicama, peeled & cut in small cubes or little julienne strips
1 Shallot bulb, minced
1 tsp. Poppy Seeds
DRESSING – whisk dressing ingredients together and pour over salad.
1/4 cup Red Wine Vinegar
1 tsp. Dijon Mustard
1/4 cup Grapeseed Oil
4 tbsp. Orange Juice
1 tsp. REAL Maple Syrup
Pinch Salt & Pepper
It’s simple really, just put this all together and BOOM you’ve got a party with an interesting crunch in your mouth. If you can’t find jicama, get water chestnuts- not quite the same BUT it gives it the interesting crunch!
