Super Simple & Quick Paella Style Surf & Turf Rice

Paella Style Surf & Turf Rice is a great alternative to traditional style paella.

Finding ways to cut corners without compromising meals is my top priority in order to keep my family happy.

This Paella is so easy. You use what you’ve got on hand and it makes dinner a little extra special. Gives dinner a restaurant feel.

I came up with this on a weekday afternoon while day dreaming of heading up to San Francisco and indulging in a little Paella of my own at Esperanto’s.

Normally, you don’t use a long grain rice with this particular dish. You use Arboro Rice, which is a short grain rice and it’s a little thicker of a grain.

I searched my pantries and I didn’t have Arboro Rice and I was really craving this! So I decided to use Jasmine Rice in lieu. The grain is longer, but still a fragrant grain.

It actually ended up being really delicious and flavorful, despite the use of different rice and a few shortcuts here and there. I hope you enjoy my recipe and make this at home with whatever you’ve got on hand.

RECIPE: PAELLA STYLE SURF & TURF RICE

You need to make this in two parts and then combine it, if you want to be efficient and not make a huge mess in your kitchen. You can also Make it in 2 skillets.

LAND & SEA INGREDIENTS

  • 2 Red Colombian Sausages, diced
  • 1 Large Chicken Breast, diced
  • 1 Cup Raw Shrimp, cleaned & deveined
  • 2 tsp. Paprika, divided
  • 1 tsp. Salt
  • 1 tsp. Pepper
  • 1 tbsp Oil, divided (I used Bacon Fat)

RICE INGREDIENTS

  • 1.5 Cups Rice (any will do)
  • 4 Cups of Chicken Broth (I used Knorr Chicken broth diluted in 4 cups hot water)
  • 1 Maui or Sweet Onion, mined
  • 1 tbsp. Parsley, dry
  • 3 tsp. of Garlic, minced
  • 1 Pinch Saffron (about 1/4 tsp.)
  • 1/2 tbsp. Oil (I used Bacon fat)

GARNISH INGREDIENTS 

  • 1 Lemon, cut into segments
  • 1/3 Cup Roasted Corn (Any corn or peas will do)
  • Generous pinch of Gray Salt

Alrighty, so you’ve gotta get you’re proteins cooking! First I suggest to cut everything up and have it ready to go so you can just get it done fast!

PREPARATION

  1. In a bowl, sprinkle salt, pepper and paprika on Shrimp and chicken.
  2. Cook the sausage at medium heat until the sausage is fragrant and the skin starts to crisp & roll along the edges. Remove from pan and set aside.
  3. Add diced chicken to hot pan. Put in the remaining oil that you divided. Stir and remove once the chicken is no longer pink.
  4. Heat/Prepare hot chicken broth.
  5. With the same pan you used to cook the chicken & sausage, continuing on medium heat, add oil. Once the oil smokes, proceed to add the onion, parsley and garlic. Cook until translucent.
  6. Dump in the rice and combine will with the onion mixture.
  7. Gradually pour in the hot broth and stir the rice until it starts to boil.
  8. Once it is at a roaring boil, add your saffron then dump ALL the protein in, including the raw shrimp.
  9. Cook over medium heat for ten (10) minutes and reduce to low. Cover pan with aluminum foil and vent a corner. Let it work it’s magic for another 15 minutes.
  10. After a total of 20 minutes on heat, uncover and sprinkle with corn, additional parsley (optional) and gray salt.
  11. Cover again. After 5 minutes, remove from heat and garnish with lemon wedges.

I think you will really love the Paella style rice and make it part of your regular meal rotation with different protein or even adding tomatoes/paste! Plus your kid’s will love it!

Also goes great with Paprika Roasted Chick Pea’s and a glass of red wine!
