I love cozy winter meals and this is The Best Easy Roasted Salted Slow Cooker Chicken to indulge with on these cold nights.
Farm to Fork Chef provided the beautiful Montauk finishing salts. All opinions are mine, as is the recipe.
- 1 Fryer Chicken
- 2 Tbsp. Grape seed oil
- 1 Tbsp. Yellow Mustard
- 1.5 Tbsp., + 2 pinches reserved – Farm to Fork Chef Montauk Finishing Salts
- 3 Carrots, peeled & chopped
- 2 Onions, peeled cut in quarters
- 5 Red Potatoes, cut in quarters
- 1 Orange, cut in quarters
- 1 Tsp. Coconut oil
- 1 Tbsp. Butter
- Slow Cooker
- Dish Cloth
- Large mixing bowl
Rub coconut oil on stoneware pot of slow cooker, then set on high. Place cut vegetables at bottom of pot to create bed for chicken to sit on.
Remove whole fryer chicken from package; discard guts and rinse. Place chicken in large mixing bowl. Pour oil, mustard and salt onto chicken and massage into chicken. Stuff oranges into cavity of chicken.
Place chicken in slow cooker on top of vegetables, on high for 4.5 hours; cover with kitchen towel.
Once the chicken is cooked, for a crispier skin, preheat oven to broil setting and quickly spread 1 tbsp of butter on skin; sprinkled with remaining salt and broil 2-3 minutes.
