It’s going to be a beautiful weekend, so enjoy an easy grilled meal that will please everyone and looks like you spent a TON of time making it!
- 5 Chicken Breasts, individually wrapped-thawed
- 25 Stalks of Asparagus
- 5 Thick cut slices of Monterey Jack
- Salt & Pepper
- 1 tbsp. Green Goddess Dressing Base
- Cooking/Baking/Grilling String or toothpicks (soaked)
Pound out chicken in wrapper, I found this to be easier for clean up and disposal. I did one in a ziplock bag above so you can see as well- but then you have to use a bunch of bags and it’s not as cost effective (yeah, I’m cheap…). Get them nice and flat with a mallet, can or rolling pin.
Place a slice of cheese in the center with four stalks of asparagus then sprinkle with Green Goddess Base and season with salt & pepper to your liking.
It TOTALLY worked! I thought it would burn off BUT it didn’t!
I started with my gas grill very hot (400) to sear the chicken, then I reduced the heat to low (300), frequently turning on all sides for 25 minutes. Some of the cheese did melt out BUT it did still have cheese inside and a yummy crunch cheese on the outside.
So worth trying!
