Easy Pork Loin Roast

Ok so you need a quick impressive meal that tastes good? Have no fear! Sweet & savory roasted pork loin with root veggies is here to save you!


So first thing you MUST DO, get that oven hot! Preheat to 400.

Ingredients for Pork
2-3 lb. Pork Loin
1/4 Grapeseed Oil
4 tbsp. Garlic, minced
1 tbsp. Dried Parsley
1.5 tsp. Dijon Mustard
1/4  cup loosely packed dark brown sugar

Mix oil, garlic, parsley and sugar- set aside. Rinse pork & pat dry. Rub with mustard and then coat with oil/garlic/sugar mixture and place in roasting pan or half sheet baking pan, lined in aluminum foil.


Ingredients for Root Veggies
6 Rainbow Carrots, peeled
2 Parsnips, peeled
1 bag Dutch Baby Potatoes (approx 20)
1/4 cup Grapeseed Oil
1 tbsp dried minced Onion
1 tsp. Italian Coarse Sea Salt
1 tsp. Black Pepper

Cut carrots & parsnips into 2″ chunks and put in a bowl. Add potatoes. Mix oil onion, salt & pepper in same bowl. Toss then pour out onto a prepared baking pan (half sheet covered in aluminum.) – you can also make it fit on the same pan as your pork loin roast.


Place in oven for 1 hour 10 minutes. Internal temp should be 150-160- but let it REST for 10 minutes to keep cooking for a few minutes afterward.


Slice, serve with asparagus and the roasted root veggies.
