It’s cookie swap time! These are hands down the BEST soft coconut cookies for a cookie swap!
I’ve tried so many coconut cookies and these are the best ones I’ve made to date, besides my easy super moist coconut macaroons. I’ll post those this week!
Let’s just get this out of the way, who here also hates the plastic taste of some of the coconut cookies you buy in the store and you’re just hoping that they are going to be good?
Me too! I had to make some to try and fix this issue! Here’s how my recipe goes down…
Set your racks to the center of the oven. Line baking sheets with parchment.
- 2 Sticks Unsalted Butter, Room Temp
- 1 Large Egg, Room Temp
- 1.5 C Superfine Sugar
- 1 tsp Pure Vanilla Extract
- 3 tbsp milk
- 1 tsp Baking Powder
- 3 C Flour
- 3/4 C Sweetened Coconut
Cream Wet ingredients for 2 minutes on medium speed in stand up mixer with paddle attachment.
Combine dry ingredients, with he exception of the coconut on a piece of parchment or wax paper. You will then slowly pour into the butter mixture. Mix for 1-2 minutes on medium speed until combined. Don’t forget to scrape down the sides.
Slowly add the coconut to the mix and it will get into a chunky ball form.
