Apple Tart

I was invited to my mom’s place in Boulder Creek (Santa Cruz Mountains near the cool haunted Brookdale Lodge) for a family  get together and I was inclined to bake a dessert.
I pondered on something easy, not overly sweet, out of a box or ugly. As always, I wanted to “WOW” the guests. So I opted for an Apple Tart.

I weigh ALMOST everything I bake- SO get a scale or go by my measurements

1 Trader Joes Pie Crust THAWED

2 1/2 Granny Smith Apples, peeled, cored & sliced THIN wedges AND PATTED DRY ON PAPER TOWEL

1 tsp. Cinnamon

4 oz. or 1/4 cup Bakers Sugar

10 oz. or 1.25 cups ROOM TEMP Cream Cheese

6 oz. or 1/3 cup bakers sugar

1 ROOM TEMP Jumbo Egg

1 tsp. Vanilla Paste or Extract (I LUV the paste!)

Zest of 1/2 lemon

Heat oven to 400 degrees

Roll out dough AND Press onto Tart Shell (or Cookie Sheet, if going for a Rustic Look).

Combine 1 tsp. Cinnamon with 1/4 Cup Sugar and Apples and set aside.

In Stand Up Mixer or Processor or Electric Beater (whatever you’ve got) combine all other ingredients and mix for 2 minutes until very creamy and voluminous; Spread into tart shell.

Arrange apples in an artful manner. I picked a flower.

*Crack some Trader Joe’s Cinnamon Sugar on top- bakes up with a little crunch on top.

Bake 35 minutes!
